How to Make a Non-Alcoholic Whiskey Fizz

The Fizz is the lighter, longer cousin of the Sour — same citrus and sweetness, but shaken with egg white and topped with soda for a frothy, refreshing drink that works at any time of day. Here's the non-alcoholic version.


What You Need

  • 2 oz No. 86 Non-Alcoholic Whiskey
  • ¾ oz fresh lemon juice
  • ¾ oz simple syrup
  • 1 egg white (or 1 oz aquafaba for vegan version)
  • 2 oz cold soda water
  • Ice
  • Tall glass (no ice in the finished drink)

How to Make It

  1. Combine No. 86, lemon juice, simple syrup, and egg white in a shaker without ice. Dry shake for 15 seconds — this builds the foam.
  2. Add ice to the shaker. Shake hard for another 10 seconds.
  3. Double strain into a tall glass with no ice.
  4. Top with cold soda water, pouring slowly down the side. The foam will rise to the top — that's what you want.
  5. No garnish, or a small lemon wheel resting on the foam.

The Dry Shake

Shaking without ice first is what creates the foam. The egg white needs agitation and air to build structure — cold ice inhibits that process. Dry shake first, then add ice for the chill shake. Skip the dry shake and you get a flat, under-foamed drink.

Aquafaba Option

Aquafaba (the liquid from a can of chickpeas) works as an exact substitute for egg white. Use 1 oz in place of one egg white. The foam is slightly less stable but holds long enough to drink. No detectable chickpea flavor in the finished cocktail.
